If its there mainphase you cannot use an instant before they make an action or the phase changes. They would use the piper first, then you could bounce the piper, but her ability would be on the stack. After the unsummon resolves and there piper is back in there hand, her ability would still resolve and they could cheat the piper back on the field (that would be funny) or get there fatty out that they wanted to get. You could of course just bounce whatever they brought out. And take note even if you unsummon first they could activate the piper as a response, and her ability would resolve before the unsummon took place.
