You can't cast an instant, put Gelectrode's tap ability on the stack, then untap him again once the instant resolves. He untaps when you cast the spell, not when the spell resolves.

That's not true. The untap ability is a triggered ability and uses the stack. So, if you cast an instant you put it on the stack, Gelectrode's untap ability triggers and goes on the stack then you tap it for its tap ability which goes on the stack as well. The stack resolves backwards, so damage will be dealt, then Gelectrode untaps, then the instant you played resolves.

No you can't because the copies aren't cast. They're just copied.

This is my favorite card of all time. Period. I have had more fun with this card than any other.
Gelectrode mana cost... 3
Number of instants and sorceries to back it up... 37.
Doing every significant action on your opponents turn AND getting to deal damage to them in the process... Priceless.
There are some players that a hand full of instants can't satisfy... for everyone else, there is Gelectrode.

my friends have scooped every game where i got this combo.
Gelectrode + basilisk collar + clout of the dominus
a 2/3 haste SHROUDED pinger with lifelink and deathtouch that untaps every time i play an instant or sorcery. they have to blow a field wipe just to get rid of it. this alone has locked down the whole board and noone would dare swing being afraid that i would instant and bolt their favorite creature. seriously a crazy card.
