@Kryptny, the reason is because human zombies, spirits, etc. are the default, so putting human zombie is considered redundant, and also so zombies don't get the bonuses from human lords, such as in Innistrad block.

For Undead Minotaur I'd give
B, pay 3 life: Return Undead Minotaur from your graveyard to the battlefield tapped. Play this ability only if a Minotaur has died this turn.
