I played this deck against my friends modified Mind Seize deck. this is how it went.

so, if i give my avatar ('into the graveyard') the gift of immortality ('dies') and it should become mortalized, which ability resolves first?

Both being triggered effects, the tirgger being "when ~this~ dies" (basically), you would be able to stack the abilities as you wished. So stack the Avatar's ability first, then Gift's. Thanks to the "First In Last Out" nature of the almighty stack, Gift would return it to play, the Avatar's ability would do nothing (no shuffle as the rulings on this card specify), then EOT Gift would come back pending they are both still around by then.
