He is not by any means uncounterable. You just have to counter him AFTER the trigger resolves, and BEFORE the spell resolves.

Opponent casts demigod
Trigger goes on the stack ABOVE the demigod, meaning it will resolve first.
You say no response to the trigger, and let the trigger resolve.
You then counter the demigod.
Demigod goes to graveyard after trigger has already resolved, and so is not brought back.

Uncounterable. Or at least he was, before people recognized how his trigger works. There was a period of time where this card brought out the *** side of every experienced player playing a less experienced player.

That would the sweetest of all the mulligans to rip into. If I drew that my maniacal laughter would grow with each card until I just pass out then lose by default. If it were a "friendly" mull, that is.
