@Luke: Yes and no. You can nab the creature, but you have to do it before the combat damage is dealt, since that doesn't use the stack anymore. Here's how it goes:
Combat Phase --> Each player then gets priority --> Declare Attackers, declaring (at least) Adarkar Valkyrie --> Each player then gets priority again --> Declare Blockers, where your opponent declares whatever creature(s) he wants that can block it --> And again each player then gets priority, so now that you know what he's blocking with, you can tap the Valkyrie and target the blocker --> Combat Damage Step, if the blocker dies you get it. If it doesn't die, the effect lasts until end of turn even if Valkyrie doesn't survive combat, so you can follow up with an instant or sorcery in your Second Main Phase to nab that creature.

1) Yes, the Metamorph has the name "Adarkar Valkyrie" as well. When you "copy" a card, it gains all copyable text and variables (this being name, mana cost , card type, subtype, supertype, expansion symbol, rules text, power, toughness, and/or loyalty). so it cannot target itself.
2) To my understanding, this would simply depend on who the active player is; All the rulings I can find simply state that it's active-nonactive on triggered effects. So active player's is put on, then the inactive. Top of the stack resolves, the non-active player gets the creature and the active player's effect does nothing. I guess it works that way since the effect needs to return the creature to the battlefield, and that can't happen since it's already on the battlefield? Still not 100% on that though.

Yes, a creature that is sacrificed dies, and yes the Valkyrie's ability would trigger.

The only thing the valkyrie can target is a creature on the battlefield, since anywhere else (hand, gy, library etc) they ain't creatures but creature cards. And that ability works only once on the target, since when it dies and returns it's considered to be a new creature with no ties to what happened to it last time it was in play.
Still a great card.
Fun fact: if you have two of these valkyries in play, and someone plays mass removal, you can have your valkyries target each other, so that they'll both return once the mass removal spell resolved.

A creature card in the library is not a "creature," it's a spell. So no, you can't pull creature cards from libraries with this.
