Aside from being one of the most iconic blue cards in both flavor and ability (what's more blue than copying a creature using magic?), it's also one of the most memorable pieces of art in Magic.

The coolest think you can do with a doppleganger is to get it to copy itself. Next turn, the ability triggers twice, so you keep selecting itself. 2,4,8,16 instances of the triggered ability over subsequent turns. Then with a morphling in play, you can switch to something like a prodigal sorcerer, switch back to morphling, pay U, untap, switch to prodigal sorcerer as many times as you can.
The most practical sort of target is a multiplayer beater like a pristine angel, then you can turn it into the biggest fattest creature in play when you are ready to win.
