I think that's an expected 11.25 damage for your opponent and 5.625 for you, with one Krark's Thumb.

I've always wanted to abuse this and other coin-flip centric cards, but never had the balls to go out of my way to get them.

Let's say I have that card that allows me to flip two coins and choose one every time I would flip a coin.

Do I get to see whether my opponent got heads or tails before deciding which flip I keep? (If opponent gets tails, I would always take heads, but if (s)he gets heads, I might take the hit from the tails to keep the damage going.)

Well, the effect happens at the same time, so your stuck guessing.
My suggestion if your plan is to win or get closed to winning, is choose tails everytime, until you get to ~5
then choose heads everytime.
