Imagine you have 1-blue, your opponent needs to kill this (or a creature with this ability), and 1 green. In your hand you have vines of vastwood, but your opponent believes he can 2-for-1 himself to kill this and win. Instead he 2-for-1's himself and further cements his defeat.
I did this all the time with Plaxcaster Frog because people *needed* a grafted creature to be dead (Spike soldier can easily swing for 12.) If they saw I had 3 mana they'd think "Alright, I can double blade it!" (maybe at the frog instead.)
My point is that hidden information not only makes the game more interesting (because of the interaction between players) it makes it much harder for the opponent to figure out what you are doing. It adds bluff. Did you leave that mana open for shroud? Or do you have a counterspell?
That is why this ability is just as good as regular shroud/hexproof.

I do like the idea of pseudo-shroud though... like Frost Titan, it may convince your opponent to waste a spell on it if it gets in a deadly enough position
