With some nice mana acceleration, and dropping this on a lowly Llanowar Elves that you summoned first turn, you've basically created Terra Stomper with haste on turn 4, maybe even earlier. 4/5.
Question: The card says it IS 8/8. If I put this on a Scute Mob, will Gigantiform override the ability of being able to trigger its upkeep ability and make it a 12/12, and then a 16/16?

Quite simply the most underrated card in Standard. As many people here have already noted, it works most efficiently with elves, not only because of mana acceleration but because you can plop it onto an Elvish Visionary for an 8/8 cantrip-creature. However, the best argument I can give you is to describe the game I had not two nights ago...
My first turn: Forest, Llanowar Elves.
My second turn: Forest, Elvish Archdruid.
My third turn: I don't even have any more lands, but I can still play another Elvish Archdruid and another elf (actually a Druid of the Anima, although any elf would have done).
My fourth turn: use one land and two Elvish Archdruids to gain nine mana, and play Gigantiform, kicked. The Llanowar Elf and the Druid of the Anima become 10/10 trampling creatures, and immediately attack. I win the game. The opponent looks confused. Woohaa.
Oh, and on the Scute Mob question... +1/+1 counters are always added to the basic power and toughness of the creature, rathe... (see all)

Turn 3: Gigantiform on infect creature, swing for 8 trample infect.

I got Gigantiformed whilst playing against infect when i though i couldn't die. It was my only loss on the night, and costed me first place.
I felt life tilted to the max.

In the proper deck, this card can be insane.
In my blue-green deck, this is the most important card actually. I have 4x Slippery Boggle and 4x Silhanna Ledgewalker, and my usual combo is Gigantiform on one of these. Trust me, it works! 8/8 trample, troll-shroud!

For just more you can have an uncounterable Terra Stomper. This can still be a finisher when you have a lot of mana on the board. And if green is working, you will have exactly that.

For those of you arguing about how this works, you could just read the rulings on it, but I'll be kind enough to spell it out to you here.
1) Cast first Gigantiform (with kicker)
2) Choose target for first. This cannot be a creature with shroud.
3) Other players get to respond
4) If first enchantment is not countered, due to rules or spells or abilities, you may search your library for a second Gigantiform
5) You may choose not to find a second Gigantiform.
6) If you did find a second Gigantiform, you choose what it should enchant. This can be a creature with shroud
7) Second Gigantiform enters the battlefield. You do not get to kick it.
8) Game resumes.

I enchant my Plague Stinger. If your opponent is tapped out, you pretty much win when you play this. I usually stray from aura's but for infect decks, the risk is worth it!
