Knight of Valor (or any creature with flanking for that matter) only dishes out the flanking penalty when OTHER CREATURES ARE THE ONES BLOCKING. A flanking creature blocking another creature doesn't trigger the flanking ability. This means that your Knight of valor is a 5/2 blocking three creatures without that -2/-2 penalty. (The knight will probably die.)

For that you'd probably want a card with bushido.
Such as Samurai Enforcers.
7/4 blocking 3 creatures and getting +2/+2 per creature, or +6/+6, for a 13/10!
Of course, that's if i understand bushido correctly, otherwise it's just +2/+2 ( but a 9/6 is still nothing to sneeze at!)

Let me explain this card to any one who might not understand it. Target defending creature gets +3/+0 until end of turn and can be asigned block two more creatures during the declare blockers step. Use a Flanking creature like Knight of Valor if your really mean. Now you have a 5/3 blocking three creatures each with with -2/-2! If you love the mechanic as much I do you should check out High Ground.
