i'd say he would untap himself, hence the reason it states that it can only be used once a turn, otherwise this card would be broken, you would need to kill it the first turn it comes out or its game over.

Whats totally awesome about this card is unlike some of the other patrons, it simply says sacrifice "snake" and there are an abundance of snakes in the game. You could quite easily simply sacrifice any number of snake creatures early on and play it on your opponents turn. Your opponent attacks and is going to kill off your poor lorescale or its about to be destroyed by doomblade? Sacrifice it in response, play this card for 5, and you have a nice new 7/7 and take no damage.

Obviously the best of the Patrons, especially seeing how it untaps itself. Definitely worth it in any green deck, having snakes is just a welcome bonus.

If I have a 7/7 lump of green goo for a beatstick, I'd want to be using him to beat people, not to block and untap my other stuff. Still, the Snake Offering allows for some interesting shenanigans, especially with untapping all your lands if you're mono-green. Those sorts of interesting choices seem to go against the 'all upside' cards that Wizards is so fond of, which I personally find a bit disappointing. Overall, a really neat card.

I would really like to know if any player in the history of Magic has ever resolved the "Snake offering" ability of this card. It may have never happened.
It wasn't until I found this card that I noticed the 'offering' ability sort of grants flash (cast at instant speed). I'd never bothered to read the details before.
