This is a direct counter to any "Epic" spell cast from this block, as the Epic spell will in most cases be the first spell cast "copied" in any given turn.

Actually, this doesn't do anything to stop an Epic spell (unless it's eaten up upon the intial casting). Epic spell copies are never cast. If they were, the Epic ability would say "no". And that'd be horrible design.

Combine this, Wild Evocation and any number of cards to force your opponent to discard their hand. Once that happens you'll play free spells every turn without being able to be touched, your opponent will draw a card and it'll either be countered or it'll be a land (unless they have uncounterable cards..) meaning you're basically playing the game by yourself at that point :D :(

Boseiju, Who Shelters All says that the Erayo/Lab lock can be beaten. Also, any normally uncounterable spell can get past locks like that, so while the combo is fast and strong it isn't unbeatable.

There is no such thing as an unbeatable combo, but Erayo + Arcane Lab is one of the hardest locks in existence, and if you're going to build a deck to set it up, you are probably going to think ahead and put things in it to make its few cracks even harder to exploit. Time Stop can counter an uncounterable spell, as can Mindbreak Trap, you can Annex Boseiju, or just play it yourself so you can destroy it if your opponent tries to use it.
