There *are* times when you would prefer the sorcery speed instead of the instant, particularly for the noob player. Yes, I know, you are all experts and these mistakes could never happen to you, but some people could benefit from the extra few seconds needed to think through their options.
A newly casted creature typically has summoning sickness and as such is no threat the turn it is summoned. Here are some examples where a noob is better off with the sorcery speed removal.
Example 1: Player 1: I cast Lowland Giant and now I cast....
Player 2: "Hah! I unsummon!"
Player 1: ..... "Ok, was going to cast an enchant on him, but nvm, I'll wait until next turn".
Example 2: Player 1: "I cast Raging Goblin"
Player 2: "Hah! I unsummon!"
Player 1: "Dude, you know I have more mana, right?"
Example 3: Player 1: " I tap two mana and cast..."
