Stalking Stones has an edge over Gargoyle Castle in a few ways actually. Because it's still a land, it can still tap for mana which is fairly important, and quite a few things don't affect it due to the 'non-land' clause. Most bounce comes to mind, because bounce will just kill the Gargoyle castle token.
Generally though, I'd go with the castle.

A fun thing to dump your mana into late game if you need an emergency blocker. It's a good contingency plan for your average artifact deck, because they don't commonly need colored mana, unless it's Esper or sunburst.

worldwake makes this sort of (Extremely) obsolete. Any of the dual man-lands seem better than this, and even dread statuary has merits over this.
