Built an R/U deck around this card. love combo with any blanket effect card (Izzet overload cards come to mind) and bounce all your opponent's creatures. Great against decks built around pumping creatures with instants too

Would I be right in saying this protects illusions like Illusionary Servant? When they're targeted by a spell or ability, it will trigger both effects simultaneously so you just choose for Cowardice's to resolve first, the creature gets bounced and then the sacrifice clause has nothing to do, so it fizzles. Or is this just wishful thinking?

This makes Sea Kings' Blessing a one-sided board wipe for one mana. Cauldron of Souls also gives you free repeatable instant-speed board wipe.

This will not have a great effect with overload or other "blanket effects". It sends back creatures that are *target*ed only. Overload cards lose the word "target" when they are overloaded, it is instead replaced with the word "each".
With the right support I could see this card being very nasty though.

Here's the short answer I found: "when dealing with simultaneous triggers the active player orders his/her triggers on the stack, then the non-active players do the same in playing order"
Keep in mind the last things to go on the stack resolve first.
So if you presumably control both the illusion and cowardice then I believe you can save your illusion, but this is kind of out of my depth.
